Avocado Toast (Printable)

# What You'll Need:

→ Bread

01 - 2 slices whole-grain or sourdough bread

→ Avocado Mixture

02 - 1 ripe avocado
03 - 1 teaspoon lemon juice
04 - 1/4 teaspoon sea salt
05 - 1/8 teaspoon freshly ground black pepper
06 - 1/8 teaspoon red chili flakes

→ Toppings

07 - 2 large eggs
08 - 1 tablespoon fresh chives or cilantro, chopped
09 - 1 teaspoon extra-virgin olive oil

# Directions:

01 - Place bread slices in toaster or grill pan and toast until golden brown and crispy, approximately 3-4 minutes.
02 - Cut avocado in half, remove pit, and scoop flesh into a small mixing bowl.
03 - Add lemon juice, sea salt, black pepper, and chili flakes to the avocado. Mash with a fork until mostly smooth while maintaining slight chunky texture.
04 - Heat frying pan over medium heat. Cook eggs to desired doneness, either poached for 3-4 minutes or fried for 2-3 minutes until whites are set.
05 - Spread mashed avocado evenly over each toasted bread slice.
06 - Place cooked egg on top of avocado spread. Drizzle with olive oil and sprinkle with chopped chives or cilantro.
07 - Serve immediately while bread remains crispy and eggs are warm.
