Warm tortillas wrapped with scrambled eggs, crispy potatoes, melted cheese, and your choice of bacon or sausage for a hearty morning meal.

# What You'll Need:

→ Proteins

01 - 4 large eggs
02 - 4 slices bacon or 4 breakfast sausages

→ Vegetables

03 - 2 medium potatoes, peeled and diced
04 - 1 small onion, finely chopped
05 - 1 small bell pepper, diced

→ Dairy

06 - 1 cup shredded cheddar cheese
07 - 2 tablespoons milk

→ Tortillas

08 - 4 large flour tortillas (10-inch)

→ Spices & Oils

09 - 2 tablespoons vegetable oil
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - 1/4 teaspoon smoked paprika

# Directions:

01 - Cook bacon or sausage in a skillet over medium heat until browned and cooked through. Remove and drain on paper towels, then chop into bite-sized pieces.
02 - Add 1 tablespoon oil to the same skillet. Sauté potatoes, onion, and bell pepper with salt, pepper, and paprika until golden and tender, approximately 10 minutes. Set aside.
03 - Whisk eggs with milk, salt, and pepper in a bowl. Heat remaining oil in a non-stick pan, pour in the eggs, and gently scramble until just set.
04 - Heat tortillas in a dry pan or microwave for 20 seconds until pliable.
05 - Place a quarter of the potatoes, eggs, bacon or sausage, and cheese in the center of each tortilla.
06 - Fold in both sides and roll up tightly to form burritos. For a crispy exterior, grill seam-side down in a dry skillet for 2 minutes.
07 - Serve hot with salsa or hot sauce if desired.

# Expert Tips:

01 -
  • Everything cooks in one skillet so cleanup is basically non existent
  • You can prep the fillings ahead and just assemble when hunger strikes
  • These freeze beautifully making busy weekday breakfasts actually exciting
02 -
  • Warm your tortillas well or they will tear the second you try to fold them
  • Do not overcook the eggs because they keep cooking inside the warm burrito
  • Let the filling cool slightly before rolling or the tortilla gets soggy fast
03 -
  • Cook your potatoes in the bacon fat instead of oil for incredible flavor
  • Grate your own cheese because pre-shredded has anti-caking agents that prevent melting
