Golden crispy chickpeas seasoned with aromatic spices for satisfying healthy munching anytime.

# What You'll Need:

→ Chickpeas

01 - 1 can (15 oz) chickpeas, drained and rinsed

→ Seasoning & Coating

02 - 1.5 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 0.5 teaspoon ground cumin
05 - 0.5 teaspoon garlic powder
06 - 0.25 teaspoon ground cayenne pepper
07 - 0.75 teaspoon fine sea salt
08 - 0.25 teaspoon black pepper

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas dry with paper towels, removing as much moisture as possible to achieve maximum crispiness.
03 - Spread the dried chickpeas on the prepared baking sheet in a single layer.
04 - Roast for 20 minutes, shaking the pan halfway through to ensure even cooking.
05 - Remove from oven, drizzle with olive oil, and sprinkle with smoked paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper. Toss thoroughly to coat evenly.
06 - Return to oven and roast for 12 to 15 minutes, shaking once, until golden and crisp.
07 - Remove from oven and allow to cool for 10 minutes. The chickpeas will continue to crisp as they cool. Serve warm or store in an airtight container at room temperature for up to 3 days.

# Expert Tips:

01 -
  • They're genuinely addictive—crispy on the outside, protein-packed, and nothing like the soft chickpeas you might expect.
  • Takes barely 45 minutes from pantry to snack bowl, making it perfect for those moments when you crave something homemade and healthy.
  • One can of chickpeas makes enough to share, or keep all to yourself with zero guilt since they're completely vegan and gluten-free.
02 -
  • Moisture is the enemy of crispness—I learned this the hard way by not drying my chickpeas properly the first time and ending up with something that was chewy instead of crunchy, and it taught me to never skip that paper towel step again.
  • They'll seem slightly soft when hot but firm up dramatically as they cool, so resist the urge to keep roasting them thinking they're underdone.
03 -
  • If you want extra crunch, peel the chickpeas before roasting—it sounds fussy but the results are noticeably crisper and it becomes meditative if you put on a podcast.
  • Shake the pan more often than you think you need to; this prevents burning and ensures every chickpea gets equal heat and coloring.
